Pie Crusts

What is pie crust?

A pie is a pastry that is baked in an oven or pastry shop. They can contain different fillings such as pastry, vegetables, or meat. Pies are differentiated according to the type of crust. Bottom crusts (filling crusts) are made by spreading the dough on the bottom of a pan and placing the filling on top. The top remains open during baking and serves only to cover and hold the top filling. In a top-crust pie, the filling is on the bottom of the pan and the crust covers the filling before baking. In a two-layer pie, the pastry is on the bottom and the top is covered before baking. Puff pastry is often used to make crisp pie crust. The ingredients in puff pastry are breadcrumbs, mashed potatoes, and baking powder.

What is gluten?

Gluten is derived from grains such as wheat, barley, and rye and, when mixed into the dough, helps make it softer and more elastic. Gluten is a source of protein and is often used as an additive in many baking recipes. Gluten is used in pizza dough, bread, and most baked goods. Bread generally contains more gluten and baked goods less. Kneading and moisture allow the gluten to develop, resulting in a crisper product. The amount of gluten in the flour is usually measured with a farinograph. This is a baking instrument that measures the quality of the flour used for baking.

The health risks of gluten

Gluten is a food additive of American origin. It is found in pizza, bread, baked goods, and most processed foods. However, many people do not realize that continued consumption of gluten can be harmful to the body. Medical research shows that even if you don't have celiac disease per se, or don't have a positive intestinal biopsy, eating gluten products can cause serious problems. People with celiac disease have an increased risk of dying from cardiovascular disease and cancer. A comprehensive study conducted between 1969 and 2008 found that deaths increased by 39% in people with celiac disease and 72% in people with gluten-induced intestinal inflammation and gluten sensitivity, but the risk of death increased by 35% in people without celiac disease.

Most people with gluten sensitivity are unaware of their condition. They misdiagnose their disease as being caused by something other than gluten consumption. Today, a new trend toward healthy living is emerging: eating gluten-free foods. Homemade pies, in a variety of flavors, are a popular snack in many households. To make this popular treat healthier, websites and online health magazines are touting gluten-free pie crusts.

How to make gluten-free pie crusts

Gluten-free pie crusts can be made in two ways. First, you can make your own dough using some online recipes, and second, you can make the crust using a ready-made recipe. An example of the latter is The Gluten Free Pantry's perfect pie crust mix. Other varieties are available at grocery stores in different states and at Whole Foods.

It's hard to taste the difference between a regular crust and a gluten-free crust. In most cases, they taste the same. But if you look closely and try the gluten-free crust, the reason is simple: it tastes better. Gluten causes the dough to rise and make it "doughy" or "soft and heavy". Pies should not look or taste like dough. Unlike bread and pies, they should be soft and flaky. Pie dough contains a lot of fat and very little liquid. The ingredients are simply mixed and blended so that there is less gluten.
